These micro organism transform waste material into ammonia which is then converted into nitrite and subsequently into nitrate. That is then utilized by the plants as fertilizer and eliminated from the water. In some salt water aquariums there can be no plants so these nitrates should be eliminated by other means, usually with filters.
Fish tank filters can be mechanical, chemical and biological. Most aquariums may accommodate all 3 types of filters and it is going to be up to you, the owner, as to which kind to use. If you are a beginner you might want to take advice on this and keep away from the organic filters for now or at least don't exclusively depend on them as they take some getting used to.
